Smoke-cured ham with toasted cereal. Sherry aromas develop providing plump raisin, fig, and prune. Subtle cocoa powder and orange citrus notes entwine with smouldering peat smoke. Beeswax polish sits in the background.
Initially salty, giving way to milk chocolate and hints of chilli. Stewed apple and fresh seville orange flavours emerge, eventually leading to a touch of roasted walnut and oak.
Sweet and slightly drying with smouldering bonfire embers.
